Summary

Throughout the year, you will learn about all aspects of the food supply chain and the factors that influence how we grow and process our food commodities, including how cultural, financial, psychological and social factors affect dietary choice and the supply chain. A key theme running through the module will be sustainability; why is it important and how can it be achieved? Key aspects of agricultural production will be introduced for both UK and global agricultural systems. You will have a comprehensive introduction to the key concepts in the field of nutrition including micro and macronutrients, alongside knowledge of the nutritional composition of food ingredients. Your learning will be supported through farm visits and practical sessions in our state-of-the-art facilities.

Target Students

Available to Year 1 students studying the following:BSc Food Science, BSc Food Science and Nutrition, BSc Nutrition, MSci Nutrition, Master of Nutrition & Dietetics, BSc Animal Science, MSci Animal Science, BSc Agriculture, BSc Agriculture and Crop Science, BSc Agriculture and Livestock Science, BSc Integrated Agricultural Business Management.

Classes

Each student will take part in 1 fieldtrip.

Assessed in both autumn & spring semest

Educational Aims

The aims of this module are to: (1) gain an understanding and appreciation of the full food supply chain, and the importance of sustainability at each step; (2) equip students with a knowledge of micro and macromolecules, including how and where these are produced; (3) give students hands-on laboratory experience; (4) expose students to the breadth of research carried out on all aspects of the food supply chain.

Learning Outcomes

1. Describe the three pillars of sustainability in the context of food supply chains. 

2. Appreciate the full breadth of the food supply chain from food production to food consumption. 


3. Understand the most important crops/animals in terms of global food production and the impacts of climate change on food security. 

4. Describe the impact of environmental, cultural, financial and social factors on food choices and nutritional intake. 

5. Discuss impact of food choices on sustainability. 

6. Describe the functional characteristics of essential nutrients (macro and micro) in mammals. 

7. Gain an exposure to the broad range of research carried out across the food chain.
